Jackfruit
– Vitamin A: great for eye health
– Vitamin C: for the immune system and skin health
– Riboflavin: needed for growth and overall health
– Magnesium: needed to help maintain normal nerve and muscle function
– Potassium: regulates blood pressure
– Copper: allows the body to maintain healthy bones, blood vessels, nerves and immune function
– Manganese: an essential vitamin for the functioning of the brain and nervous system
I like to use this as a ‘pulled meat’ substitue. Either flavouring with BBQ or spicy sauce and baking, it’s perfect in wraps, stir fries, chillis and even as part of a pasta bake

Vegetables.

Jalapeno pepper
– Vitamin C
– Vitamin B6: regulates emotions (serotonin, dopamine and GABA)
– Vitamin A
– Vitamin K: helps the blood to clot
– Folate: for cell function and tissue growth
– Manganese
I LOVE jalapenos on everything. From sandwiches, salads, in chilli, in pasta bakes – if you like spice just add them in
