Fruits.

Lime
– Vitamin C: for both immune and skin health
– Iron: helps the transportation of oxygen in red blood cells
– Calcium: neededs for the body to take on vitamins to develop healthy bones and teeth
– Vitamin B6: regulates emotions (serotonin, dopamine and GABA)
– Thiamine: helps to convert food into energy
– Potassium: helps to regulate blood pressure
I love lime in my guacamole or simply in fresh ice cold water

Lemon
– Vitamin C
– Potassium
– Vitamin B6
– Citric acid: helps to prevent the formation of kidney stones
– D-limonene: this is primarily found in the peel but can help to relieve heart burn and stomach reflux
I love lemon either in a cake, with ginger as a tea or even drizzled over a salad

Lychee
– Vitamin C
– Copper: allows the body to maintain healthy bones, blood vessels, nerves and immune function
– Potassium
– Epicatechin: a flavonoid that helps to improve heart health
– Rutin: a flavonoid that helps to protect against chronic diseases, such as cancer, diabetes and heart disease

Vegetables.

Leek

– Vitamin K: this helps the blood to clot
– Vitamin B6

– Manganese: essential for the functioning of the brain and nervous system
I personally like leeks as part of a soup base or within meals such as stews

– Pantothenic acid: helps to make blood cells and convert food into energy

– Zinc: good for the immune system

I love to use lentils within chilli or a spag bol. I also like them within soups or curries to add thickness
