I’m sorry to say we’re not actually going to be talking about pies in this video, I just thought it was a super fun pun but hear me out. Rhubarb pie and crumble are some of the best ways to enjoy rhubarb, so make sure to think about making one after reading this post about how good rhubarb is for you!
I’m sure a lot of you tend to think of sugary treats when it comes to rhubarb, I do too. When you are having rhubarb even as part of a dessert, there’s some great benefits that come with it.
It contains vitamin K1, calcium, potassium, vitamin C and even folate.
I know, I know. Here she goes again with the antioxidants talk but I honestly can’t explain how good they are for you!! Rhubarb is a super rich source of antioxidants. Antioxidants essentially help protect your cells against free radicals. So this is things that can cause you diseases such as cancer, heart disease, diabetes and many others. Without these in the body, free radicals would essentially take over and cause death – not ideal right!
Rhubarb stalks are a good source of fiber and this can help to reduce the levels of LDL (bad) cholesterol in the body. I’m not over here saying it’s the best source, but it’s definitely not going to be a hindrance if you eat some!
As rhubarb on it’s own is a very sour vegetable, it’s suggested that you cook it in a way to sweeten it up, which is why you tend to associate it with desserts. From jams to cakes and pies, it’s a great way to get some extra nutrients in. It can also be included in salad to add a little bit of ‘sweet and sour’ to the dish.
